This bacon wrapped Jalapeno poppers recipe, is delicious! It would be the perfect crowd pleaser as a game day recipe, or served as a side dish for a special meal – or make it your main dish. They are that delicious! They are rich, and creamy and dreamy, and surprisingly easy to make.

The simplicity of the recipe lies in the fact that you are making a quick filling, stuffing, wrapping and then let the baking process do all the hard work for you of melding all the flavors together.

You could even make the filling and stuff the jalapenos ahead of time, and then bake right before you are ready to serve them. I was surprised at how easy they were to make the first time I put together a batch, and never stopped after that first batch. I was hooked.

This is a crowd pleasing recipe for a reason. Each bacon wrapped jalapeno is bursting with so many rich flavors, that each mouthful is worth savoring. There is the heat and bit of crunch from the jalapeno, coupled with the cheesy creamy goodness of the stuffing, and all wrapped up in the smoky rich flavors of bacon. It is making me hungry for them just writing about them!

You may also be surprised by how mild the flavor of the jalapenos taste, once you bake them – wrapped in bacon and filled with creamy goodness. I was. I like spicy foods, but these can definitely be tolerated by those who fall on the “liking only milder” spicy foods side too. But beware – you might find them addicting once you try them. I did.

If you want a “spicier” version, just leave a few seeds from the jalapenos in them (this is what adds much of the heat). I prefer them fully seeded, as I think it is the perfect blend of the flavors. You can play around with the recipe a little though, to see what you prefer the most.

I also like that not only do they show well as an appetizer, they are delicious, and they are also very friendly to anyone on a low carb diet. So that makes them perfect to serve to a crowd.

You could even throw these stuffed Jalapeno Poppers in the air fryer instead of the oven if you prefer the more traditional taste of deep fried jalapeno poppers without all of the work. We stuff our cream cheese jalapeno poppers and wrap in bacon, and just bake in the oven usually though, to keep this recipe simple.

Ingredients for the jalapeno poppers with bacon

If you want to stuff your poppers with a really hearty stuffing, follow this ingredient list. It can be modified however, based on what you have on hand. For example, you can easily omit the sausage and brown sugar, and still end up with delicious bacon wrapped poppers, if need be.

  • 1 lb ground breakfast sausage – mild or spicy
  • 12 oz cream cheese
  • 12 Jalapeños 
  • 12 strips of center cut bacon 
  • 1 TBLSP of brown sugar
  • 1/2 Cup Shredded Cheddar Cheese 

How To Make Jalapeno Poppers

To make these Bacon Wrapped Jalapeno Poppers, start by gathering your ingredients listed above. Next you will want to:

  • Pre-heat oven to 375 degrees.

  • Brown sausage over medium high heat, drain the fat. 

  • Add cream cheese to the sausage mix and stir until well blended and melted. 

(Note – if you are going to make without the sausage, then skip the browning step and start with just the cream cheese at this step). 

  • Mix in the cheddar cheese. Set aside. 

  • Cut the stems from jalapeños, slice jalapeño lengthwise down the center and remove seeds (recommend using food prep gloves to avoid absorbing the jalapeño heat).

I like to look for as large of a size of jalapenos as I can find (and firm), so they take more stuffing!

Note – the jalapeno seeds are what add a lot spice or heat to the dish. So, if you do not want them too spicy, you will want to be sure to remove them all We recommend using food gloves, as the heat from the Jalapeno seeds will stay on your hands for quite some time, and if you were to run your eyes or face, it is not fun!

  • Slice the 12 pieces of bacon in half (for wrapping the jalapeño).
  • Using a small spoon, scoop the sausage and cream cheese mix into each jalapeño popper.

  • Wrap each jalapeño with 1 slice of the halved bacon, place on baking sheet.  Two rows of 12 with jalapeños touching works best. 

Note – the reason we mention touching, is that sometimes it can be tricky to balance them. They should cook just fine, even if they are touching in this recipe. 

  • Sprinkle brown sugar evenly over the poppers, mostly on the bacon.
  • Bake for 45-55 minutes at 375 degrees until the jalapeños become soft and the bacon has browned. 
  • Let cool slightly, serve and enjoy!

These make a great finger food serving for your game day get together, or any other kind of gathering.

Just be prepared for folks to start asking you to bring them to every gathering moving forward. Yes, they are that good!
