Chewy Peanut Butter Cookie Recipe {Crumbl Copycat Version}

Are your kids as obsessed with Crumbl cookies as mine are? Honestly our whole family loves a good Crumbl cookie, but they are not so frugal at all, definitely a splurge to go there! So we love making Crumbl copycat recipes so we can bring that moist, thick, delicious Crumbl goodness home!

If you are a fan of all things peanut butter, this chewy peanut butter cookie recipe is so good! The inside is filled with an extra dollop of peanut butter which is a nice surprise when you bite into the cookie.  The cookies are then sprinkled with sugar on top to finish it off!

What I like about making the copycat Crumbl cookies at home is that you can control the size of the cookies, too! I love Crumbl cookies, but I can only handle like 1/4 of them because they are so rich. So this way you could make smaller cookies so they aren’t as overwhelming for your family or your guests if you’re serving at a gathering.

Chewy Peanut Butter Cookie Recipe:

 

Ingredients:

  • 1 cup salted softened butter
  • 1 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2tbsp vanilla extract
  • 2 cups peanut butter (Smooth or creamy)
  • 3 1/4 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon

Directions:

Preheat the oven to 350
In a large bowl,  mix together 1 cup of granulated sugar and brown sugar
Add eggs and 1 1/2 cup of peanut butter.  Mix on medium until well mixed together. (2-3 minutes)

Combine Flour, baking powder and cinnamon to mixture and mix all ingredients well.
Using a 1/3 measuring cup, scoop cookie mix and make a ball.  Place 6 cookie balls on a lined cookie sheet.
Thumb in peanut butter cookie dough
Using a finger or thumb push in the middle of the cookie to create an opening to be able to fill with peanut butter.
Putting Peanut Butter inside dough
Put 1/2 tsp in each opening of the cookie
Pinch around the dough around the open to close the cookie around the peanut butter.
Flatten the cookies to the shape of a hockey puck
Sprinkled sugar on peanut butter cookies before cooking
Sprinkle the remaining of the sugar evenly on each cookie
Bake for 17-20 minutes.
 Allow to cool for 18 minutes
