Taco Soup -Easy Dinner Using your Slow Cooker + Freezer Friendly Meal too!

Taco Soup for your Slow Cooker

Taco Soup is one of families favorites, and its a very economical soup to make. I often make it after I have made tacos, using the leftover meat from that dinner. I love simple, easy meals in the crockpot & this is one of the easiest meals but it tastes delicious! Great for those cold evenings! This is a recipe from one of my Mentor Moms from MOPS – she brought me this meal right after my younger daughter was born and it’s been a favorite in our family ever since she introduced us to the recipe.

Taco Bean Soup Ingredients
Ingredients for this Taco Soup:
  • 1 lb ground beef – browned
  • Dried onions – 3 tbsp  (Fresh onion would be even more tasty but this is what I had on hand)
  • 3 cans of assorted beans (black beans, kidney beans, pinto beans, etc)
  • 1 can stewed tomatoes
  • 1 can creamed corn
  • 1 can whole kernel corn
  • 1 pkg taco seasoning (or make your own taco seasoning)

Directions:
  • Brown your ground beef or ground turkey.
  • Add all ingredients in a crockpot (I put most of these in undrained to add more of the “soupy-ness”)
  • Cook on high for 5 hours (or you could put it on low for 8-10 hrs). Or you can put in a soup pot and simmer for 2 hours on the stove.
  • Serve in a bowl with taco chips, shredded cheese, sliced olives, grated cheese, chopped tomatoes, sour cream-anything you like with tacos!
I used to frequently make meals for moms in our MOPS group as part of my position as Care Team coordinator for several yrs. I am not a gourmet cook by any means, so I love meals like this that are so tasty,  but require so little effort on my part. I just cook up this batch & I’m able to have a full meal for my family & a full meal for someone else.
I typically will give them a salad, tortilla chips, sour cream, shredded cheese (& maybe some homemade cookies if I have time) & there you go – a nice, home-cooked meal for a friend for very little time & effort.  Even better, it’s a very frugal recipe as well (less than $5 to make this soup)- you could even leave out the meat & just add more beans if you really want to keep it frugal.
This is also a recipe that is very freezer friendly as well – prepare all the ingredients & dump in a big ziploc bag or freezer-friendly container. When you’re ready to cook, just pull it out to thaw overnight in the fridge & then you can dump it in the crockpot the next morning and it will be ready & waiting for you by dinnertime!

  1. Got one even easier! Yes, brown your beef or turkey, then add taco seasoning. Put in a stoneware container and add one can beans, drained (I use black), one can diced tomatoes with juice (I use the ones with green chiles), one can corn (with juice, not creamed). Microwave covered for 20 minutes and serve with chips, cheese, sour cream. Yummy! Of course if you want more for your parties, double it! I use my Celebrating Home Bean Pot too cuz’ I KNOW it’s microwave safe.
