Cheesy Hashbrown Potatoes – Perfect side dish for Christmas Brunch or Meal!

Cheesy Hashbrown Potatoes are always a crowd favorite at any party and an easy side dish for dinner.

Cheesy Hashbrown Potatoes

I love trying new recipes and adding in some new favorites, but there are certain recipes that are just a tradition in our home for holidays and this Cheesy Hashbrown Potatoes recipe is one of the recipes that we always have to serve every Christmas gathering along with a yummy ham.  We have to bring a double batch to our extended family gathering because it’s always gone so fast. It’s a bit different from other hashbrown potato recipes, so definitely try it out if you are looking for something a little different. You just might need to make a double batch for your family, too!

Cheesy Hashbrown Potatoes:

Ingredients:

Ingredients for Cheesy Hashbrown Potatoes

  • 2 (10.75 oz) cans of condensed cream of chicken soup (cream of mushroom for vegetarian – we actually do 1 can of each for both flavors)
  • 1 1/2 cups sour cream
  • 2 tbsp butter, softened
  • 2 tbsp dried minced onion flakes
  • Ground Black Pepper to taste
  • 1/2 of 2 lb package of frozen shredded, hash brown potatoes (thawed) & 1/2 of 2 lb pkg of frozen O’Brien Potatoes w/onions & peppers, thawed (you can add just regular O’Brien
  • 4 oz extra sharp cheddar cheese, shredded
  • 1 sleeve of  Ritz crackers, crushed
  • 2 tbsp butter, melted

Directions:

Preheat oven to 350 degrees.
Lightly grease a 9×13 inch baking dish.

Mix together the two packages of hash browns so they are well mixed & set aside.

In a large bowl, mix together the soup, sour cream, butter, dried onion flakes & pepper.
Mixing all ingredients together for Cheesy Hashbrown Potatoes
Stir in the hash browns mixture and 1/2 the cheese.
Pour into the prepared baking dish, sprinkle with remaining cheese.
Layering all ingredients for Cheesy Hashbrown Potatoes
Top with crushed Ritz crackers and drizzle melted butter over the top of the crackers.
Bake 45 minutes in the preheated oven or until cheese is melted & bubbly.
