Valentine’s Day Sweets – Sugar Cookie Heart Shaped Pizza & Fruit Filled Nutella Mini Pies!

Valentine's Day treats heart shaped fruit pizza

After Christmastime, Valentine’s Day definitely seems to rank right up there with lots of baking for all the yummy goodies to bring to class parties, Valentine parties & goodies with the kids.  In fact, I just found out I have to bring two dozen cookies for a preschool party and goodies to my 1st graders’ classroom on the same day – which I’m sure is the case for many of you.

As a busy working mom, I am all about finding time-savers in the kitchen to be able to provide fun, homemade goodies, but without spending all day in the kitchen, which is where Great Value products come in. Today, my 4 yr old and I decided to try out some new recipes to us in preparation for a little Valentine’s Party we’re going to have next week with my MOPS table.

Fruit Filled Nutella Mini Pies::

 

I saw several different variations of mini pies on Pinterest, but I decided to come up with my own combination of Nutella & homemade strawberry jam.  You could use any combination of ingredients that you think would be good together and the best part is that it is so simple to make these.

 Ingredients:

Refrigerated Pie Crust Dough (I used the Great Value brand)
1 egg white (mix it with a little water so it’s easier to spread)
Nutella (or use your favorite chocolate candy or some chocolate chips)
Favorite jam or jelly (I used homemade freezer jam)
Turbinado Sugar (or any coarse sugar for dusting)
Lollipop Sticks (you can easily turn these into cute, mini pie pops by adding a lollipop stick & then arranging them into baggies for a little treat for school Valentine parties)

Directions:

  • Preheat your oven to 450 degrees (or how high the directions for your pie crust state)
  • Make sure the refrigerated pie crust dough is thawed/softened.
  • Roll it out – you may want to use a roller to roll it out a bit thinner if you prefer these to not be too thick.
  • Take your cookie cutter (I used 2 different heart shape cookie cutters) and cut out all your shapes – you will need a top & bottom shape for each pie.
  • Add a little water to the egg white & stir. Then use a pastry brush to brush on egg whites on the inside of each of the shapes.

  • Use your choice of chocolate on the inside – either spread Nutella around the heart shape or place a chocolate candy or a small handful of chocolate chips in the middle.  I only put the Nutella in the middle but I would definitely change that & spread it all around. (I was just trying to get it to look pretty & not ooze out too much, but it definitely needed more of the chocolate flavor throughout). If you’d rather use chocolate chips, you could just sprinkle a handful of them all around dough shape to get the taste of chocolate throughout  the mini pie.
  • Add your favorite jelly / jam – I used our homemade strawberry freezer jam & put a spoonful in the center of each of the bottom hearts. {If you put it too close to the edges, it will leak out when you bake it – but it’s easy to clean up & then you have more of the yummy goodness throughout the mini pie.
  • Place a heart shape on top. Squeeze it together with the bottom dough.
  • Use a fork to crimp the edges, which help it stay together.
  • Brush the top of the heart pie with the egg white.
  • Sprinkle coarse sugar on top of the egg white mixture to add some sweetness to it (if you don’t have any crunchy sugar (like Turbinado) you could also sprinkle a little bit of confectioners sugar at the end to give it a little more sweetness. {I did not add this to my mini pies, but it is definitely an addition that I will do for my party next week!}
  • Bake for 11 – 13 minutes (it will depend on your pie crust dough & your oven, though, so watch it carefully.
Another option is to make these into Valentine mini pie pops – all you need to do is add a lollipop stick while it’s drying. Then package them up in little baggies & tie a ribbon around it with a tag to give as a treat at a Valentine party! An easy & frugal treat for the kiddos!

Sugar Cookie Fruit Pizza – Valentine Edition:

My mom always used to make Fruit Pizzas for different gatherings & I’ve always loved the combination of fresh fruit, cream cheese & cookie dough, so I thought it would be fun to make a Valentine’s edition of the Fruit Pizza, shaping it into the heart shape & using red strawberries & drizzled chocolate!

Ingredients:

1 -2 rolls of refrigerated, sugar cookie dough (I used the budget-friendly Great Value brand)
1 8oz package of cream cheese
2 tbsp confectioners sugar
1 8 oz container of frozen whipped topping (thawed)
1 package of strawberries or raspberries if you prefer (or use a variety of fruit) – hull & slice them
Chocolate chips (melted for drizzling)

 Directions:

My little helper had so much fun making the heart-shaped Fruit Pizza with me – it was the perfect kid-friendly recipe to do together (& it’s always more fun with a little “friend” to keep watch, too!)

  • Use softened sugar cookie dough and roll it out onto a cookie sheet. It would be easiest to use parchment paper or a silicone baking mat) to be able to slide it onto a plate after cooked.
  • Bake the sugar cookie dough as directed – however you will most likely need to increase the time a bit to make sure it’s cooked all the way through (I had to add about 3-5 more minutes to the time)
  • Take the cookie dough out of the oven and let cool.

Here’s the heart shape after I cut it out of the rectangular shape I put it in for baking. You can see that it has some cracks, but that won’t matter as you’ll cover it with the cream cheese mixture & strawberries

  • When it’s cool, use a knife to cut out the shape – I cut it into a heart for Valentine’s Day.
  • In a large bowl, combine the whipped topping, confectioners sugar, and cream cheese & beat until smooth.
  • Spread the mixture over the cookie heart evenly with a wet knife or spreader.
  • Slice the strawberries (hull & slice them) and add them on top of the cream cheese mixture. (or any fruit that you choose)
  • Melt a handful of chocolate chips in a baggie in the microwave & cut a corner off – then drizzle the chocolate over the top.
  • You can either move the heart over to your plate/platter before you add all the ingredients or after if you want the plate to stay really clean
