My husband and two girls are slightly obsessed with shrimp (it’s what they choose for their birthday meal year after year), so we are always trying new shrimp recipes to find new ways to use this favorite shellfish for our family. My husband created this recipe as he loves Italy, so he loves to find ways to bring those Tuscan flavors into dishes & this Tuscan Shrimp Scampi recipe turned out to be a delicious combination of Tuscan flavors with shrimp.

Tuscan Shrimp Scampi with Brummel & Brown Spread for a creamy, healthier dish.

 

It’s also a dish that is creamier than your typical shrimp scampi recipe, but without using heavy cream, cream cheese, and other heavier options. We used the creamy Brummel & Brown yogurt spread in place of butter, as it is made with real yogurt and plant-based oils so it’s a healthier option than using butter.  We love a good, creamy pasta sauce, but we’ve been working on making lighter, healthier recipes for our family this summer, so this recipe gives you just the right amount of creaminess without being too heavy of a sauce.

Brummel & Brown Spread for Tuscan Shrimp Scampi

Brummel & Brown Yogurt Spread:

If you’re looking for an option to add delicious flavor but without all the calories & fat you’ll find in butter, check out the Brummel & Brown yogurt spread. Brummel & Brown is comprised of plant-based oils, purified water & real yogurt, making it great option to replace butter in recipes & as a spread.  Thanks to the yogurt base, it provides a rich, creamy flavor but with less fat & calories to give you a healthier option this summertime. I love the versatility of this spread – you can pair it with some herbs to make a savory spread for a charcuterie board for a party appetizer  or as an ingredient in a pie filled with summer berries.

Tuscan Creamy Shrimp Scampi Recipe:

Ingredients:

Ingredients for Tuscan Shrimp Scampi

1 lb uncooked shrimp (peeled, deveined & thawed)
Salt, pinch
1/4 cup Brummel & Brown Organic spread
3 cloves garlic, finely chopped
1/4 cup onion, chopped
3/4 cup milk
1 tbsp lemon juice
1/4 cup grated parmesan cheese
1/4 cup fresh basil, chopped (julienne sliced for narrow strips)
1/4 cup sundried tomatoes (optional)
3 tbsp fresh rosemary, chopped
1 box of fettuccine pasta

Directions for Creamy Shrimp Scampi:

Thaw, rinse & remove tails from shrimp. Sprinkle with a pinch of salt & set aside.

Cooking Brummel & Brown Spread with garlic & onion

In a large saute pan over medium high heat, add Brummel & Brown spread, garlic & onion. Saute until onion is clear. {We like to use Brummel & Brown in place of butter}

Adding Milk to Tuscan Shrimp Scampi

Add milk, lemon juice & parmesan cheese to mixture & stir.

Adding Shrimp to Tuscan Shrimp Scampi

Bring to a simmer (low boil), then add shrimp. Make sure mixture is coating shrimp evenly.

Adding sundried tomatoes to Tuscan Shrimp Scampi

Add basil, sundried tomatoes (optional) & rosemary to mixture.

Cook until shrimp turns pink (approximately 3-4 minutes).

Cook fettuccine pasta according to directions.

Serve your Tuscan Shrimp Scampi over a bed of fettuccine noodles.
