Description

This Tuscan Shrimp Scampi recipe is a quick & easy recipe with bold flavors & a creamy yet lighter sauce that all shrimp lovers will enjoy!


Ingredients

Scale

1 lb uncooked shrimp (peeled, deveined & thawed)
Salt, pinch
1/4 cup Brummel & Brown Organic spread
3 cloves garlic, finely chopped
1/4 cup onion, chopped
3/4 cup milk
1 tbsp lemon juice
1/4 cup grated parmesan cheese
1/4 cup fresh basil, chopped (julienne sliced for narrow strips)
1/4 cup sundried tomatoes (optional)
3 tbsp fresh rosemary, chopped
1 box of fettuccine pasta


Instructions

Thaw, rinse & remove tails from shrimp. Sprinkle with a pinch of salt & set aside.

In a large saute pan over medium high heat, add Brummel & Brown spread, garlic & onion. Saute until onion is clear. {We like to use Brummel & Brown in place of butter}

Add milk, lemon juice & parmesan cheese to mixture & stir.

Bring to a simmer (low boil), then add shrimp. Make sure mixture is coating shrimp evenly.

Add basil, sundried tomatoes (optional) & rosemary to mixture.

Cook until shrimp turns pink (approximately 3-4 minutes).

Cook fettuccine pasta according to directions.

Serve your Tuscan Shrimp Scampi over a bed of fettuccine noodles.
