Bacon Egg Cups Recipe

  • Yield: Makes 12 egg cups 1x


  • 1 Cup Bacon
  • 1 Cup Chopped Spinach
  • 12 Large Eggs
  • 1/4 Cup Jalapenos
  • 1 Cup Cooked Hamburger Chopped
  • 1/4 Cup Green Pepper
  • Salt and Pepper to taste


1. Preheat Oven to 375.  Oil a 12 count non stick muffin tin, or preferably line with silicone muffin liners.
2.Crack all 12 eggs into a bowl and beat well
3. Add bacon, chopped bell pepper, hamburger, cheese, jalapenos,  spinach to bowl, mix well and season with salt and pepper.
4.Use 1/4 cup and full with mixture and add to muffin cups
5. Bake for 18-20 minutes or until the top is lightly golden.
These can be stored in a closed tight container and refrigerated for up to 6 days.
