Description

This zucchini bread is very moist & flavorful, the perfect way to use up your abundance of zucchini from your summer garden!


Ingredients

Scale
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups grated zucchini
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs until foamy in bowl.
  3. Add in sugar, zucchini and vanilla and mix lightly but well.
  4. Next add in flour, salt, baking soda, baking powder, and cinnamon, mixing it all together.
  5. Fold in chopped nuts by spoon.
  6. Grease two loaf pans.
  7. Pour mixture into two loaf pans.
  8. Bake for 1 hour at 350 degrees or until toothpick comes out clean.
  9. This will make 2 loaves of zucchini bread.
