Cowboy Caviar Recipe (Salad, Dip, Dressing, Salsa)

Ingredients

  • 1 can black beans
  • 1 can garbanzo beans (could use black eyed peas instead too)
  • 2 stalks fresh corn on the cob (can substitute 1 can of corn, but the fresh stuff tastes much better)
  • 1 small onion (red or white)
  • 3 medium tomatoes
  • 1 large avocado
  • 1 bunch of cilantro
  • 1 lime
  • 1/4 cup of balsamic dressing
  • Sea Salt (to taste)
  • Optional –
  • 1 red or green bell pepper or one jalepeno to spice it up more


Instructions

  1. Drain and rinse black beans and garbanzo beans and add to large bowl
  2. Dice onion, tomatoes, and avocado and add to beans
  3. Chop up 1/4 cup of cilantro (or to taste) and add to the bowl
  4. If you want to add peppers dice those and add to bowl
  5. Add in 1/4 cup of dressing and the juice of 1 lime
  6. Add salt to taste (I use 1 tsp course kosher salt)
  7. Gently mix until all ingredients are mixed together
  8. Chill for 1 hour. The beans absorb the flavors so the longer you chill the better the flavor!
