Easy Quiche Recipe – Use Bread for the Crust!

Are you looking for an easy quiche recipe? I love to make quiche. Mostly because I love the taste, but also because it is a recipe that is very adaptable to what I have on hand, and can be very budget friendly. Here is one super simple version to make.

If I am planning to make it for company, I will use a pie crust, or puff pastry for the crust, as well as some nice meats and cheeses (like good ham, bacon or sausage and expensive cheese).

The other version that I often make for my family, is the “whatever is in my fridge version”. Honestly, I don’t taste a huge difference between the two and my husband loves them all.

Do I have to prebake crust for quiche?

No! Not with this simple recipe – just use bread.

I love how versatile quiche is as a recipe in general. You can make a tasty quiche so many different ways, but did you know you can simply use plain old slices of bread for the crust too? The Quiche shown above was made with a few slices of bread (use whatever kind you have on hand) I had in my fridge, some sliced ham I had from the deli we had purchased for sandwiches the day before, diced onion, herbs from my garden, and cheddar cheese. You can use crumbled sausage, or if you have a few slices of leftover bacon, and any veggies you want to dice up and add too.  Just dice up and add the foods your family likes to eat! It is the easiest quiche recipe I make.

How to make a simple quiche recipe with a few slices of bread for the crust:

There are a couple of things that make this simple quiche recipe extra easy. The first is that you can use whatever ingredients you have on hand as long as you have the base ingredients of eggs and bread. It also makes it a really affordable recipe too.  No major prep time required (if you dice up some vegetables that is about the most time consuming part of this recipe). I also love that you can use it as a breakfast quiche, make it for lunch or as a quick and filling (and tasty) dinner option.

Bread makes an easy quiche crust –

The other thing is that makes this quiche recipe so easy and affordable, is that you are simply putting down some bread slices, and then mixing the rest of the ingredients in one bowl. It might surprise you how well this comes together and makes a tasty crust. No expensive or time consuming pastry needed, but the end result is delicious quiche.

Ingredients for this simple quiche recipe: 

6 Eggs
1/4 cup Half and Half
4 Slices of bread (I used white)
1 – 2 cups of Chopped Ham, Bacon or Crumbled Sausage
2 cups Shredded Cheese of your choice (I prefer Cheddar or Feta)
1/4 cup Diced Onions (optional)
2 Tbls Diced Herbs (fresh if you have on hand, I used Basil, Parsley, Oregano and Thyme)
Salt and Pepper to taste

Gather your ingredients.

Beat the eggs and cream together, then fold in the other ingredients until stirred evenly.

Lay out your bread pieces at the bottom of your dish to form your frugal crust!

Pour the egg mixture you made above out over the bread crust.

Make sure its evenly distributed in pan, and place in oven to bake.

Enjoy for breakfast, lunch or dinner! That is it for this easy quiche recipe.

What to Serve With Quiche?

There are lots of great options, but one of my favorite side dishes to serve with quiche are diced potatoes that I fry up in some olive oil and add Italian herb seasoning, salt, pepper and sprinkle some feta cheese over it at the end.

If you are making it for lunch or dinner this spinach and strawberry salad, or this caprese salad are both good options. You could also use this broccoli salad as it has some sweetness to it too.

And if your crew wants more protein, you can make up some sausage links or bacon to also serve along side it.

How to Reheat Quiche?

I love to make a big size pan of this often when I make it, as it reheats easily and I love to eat it as leftovers. I simply microwave it to reheat.

You can also reheat quiche in the oven as well (or your toaster oven). The trick here is to cover it with foil so that it does not dry it out when reheating. Reheat in oven preheated to 350, for around 20 minutes (depending on the size of leftover pieces you are reheating), until heated through.

Ingredients

  • 6 Eggs
  • 1/4 cup Half and Half
  • 4 Slices of bread (I used white)

  • Salt and Pepper to taste


Instructions

  1. Preheat oven to 400 degrees
  2. Line the bottom of cooking dish with your slices of bread (o that they cover the entire bottom of dish in single layer, you can remove the crust if you want to, but you do not have to).
  3. In a mixing bowl add your eggs, and beat until mixed well.
  4. Add the cream and mix in
  5. Add the rest of the ingredients listed above
  6. Pour over bread layer in your baking dish
  7. Bake 35-40 minutes or until a knife inserted near the center comes out clean.
  8. Let rest for 5 minutes, then serve.
