Slow Cooker Chicken Tortilla Soup

One of my favorite recipes to make for our family as well as for others when I bring them a meal is this Slow Cooker Chicken Tortilla Soup. This soup is so incredibly easy, yet it tastes delicious and most people usually love it. I just love the fact that it involves little to no prep work and the slow cooker does all the work for you!

This recipe also makes a big bowl of soup so that you can have leftovers or you can have enough to bring a family a meal while also still giving your own family a nice meal with no extra work. It also freezes well, if you’d like to eat a meal now & then freeze the rest in smaller portions to take to work or to have at a later date.

This Chicken Tortilla soup has been passed around many times at our MOPS group since it’s so popular, all thanks to my friend Michele who originally shared this yummy recipe. :)

Ingredients:

Ingredients for Slow Cooker Chicken Tortilla Soup

  •  3 to 4 boneless, skinless chicken breasts
  • 2 cans black beans, undrained
  • 2 cans Mexican stewed tomatoes, undrained
  • 1 4 oz can diced green chiles
  • 1 can tomato sauce
  • 1 cup salsa (any kind, just pick your favorite as this will give your soup the main flavoring)
  • Tortilla Chips, as desired
  • Shredded Cheese, as desired
  • Sour Cream, as desired

Directions:

This recipe is so simple – you literally dump all the ingredients in & stir everything together. Cook it on low for 6-8 hours or high for 4 hours. Stir it every hour or so (if you’re home).

Shredding Chicken for Chicken Tortilla Soup

About 30 minutes before it’s ready to serve, take the chicken out & shred it with a fork. Then put it back in the crockpot & stir everything together once again.

Once the soup is cooked & you’re ready to eat, we serve it with tortilla chips, sour cream & shredded cheese for toppings. I’ve had friends who put the tortilla chips at the bottom of the bowl and then dump the soup over it & add the toppings on top. We like to put the tortilla chips around the side, so they still stay fairly crunchy & then put our favorite toppings on top. But, either way works great – just whatever you prefer!

Ingredients

  • 3 to 4 boneless, skinless chicken breasts
  • 2 cans black beans, undrained
  • 2 cans Mexican stewed tomatoes, undrained
  • 1 4 oz can diced green chiles
  • 1 can tomato sauce

Instructions

  1. Mix all the ingredients in crockpot.
  2. Cook on low for 6-8 hours or high for 4 hours.
  3. When ready to serve, take chicken out to shred with two forks.
  4. Return to crockpot and stir it all up.
  5. When serving, crumble tortilla chips in bottom of each bowl and pour soup on top or place tortilla chips around the sides.
  6. Top with shredded cheese and sour cream as desired.
