Apricot Crock Pot Pork Chop Recipe – 4 Ingredients!

I am a big fan of my slow cooker as I love that it will do all the cooking for me throughout the day and I can come home to a meal all ready to go, instead of having to always work hard in the evenings putting together a dish every night.  This Slow Cooker Apricot Pork Chop recipe is one of our family’s favorite recipes and it’s super simple with only 4 ingredients. It’s perfect for the busy mom or dad who needs to be able to throw dinner together before leaving for work or activities for the day & have a hearty meal ready to go for the evening.

I used pork chops in this recipe, but you can substitute the pork chops for boneless, skinless chicken breasts instead & it makes a delicious dish either way. We vary whether we have chicken or pork chops, depending on what we need to use up in our freezer based on our stockpile and current sales at the grocery stores, too.  You can serve this dish over rice, quinoa, couscous, or pasta. Or just serve it alone with veggies for a low-carb meal.

Apricot Crock Pot Pork Chops Recipe:

Ingredients:

  • 6-8 pork chops (I like to use boneless pork chops)  or use 6 boneless, skinless chicken breasts
  • 1 package of dry onion soup mix
  • 1 10 ounce bottle of Russian salad dressing (or use Catalina Dressing if you can’t find Russian)
  • 1 cup apricot jam (I’ve even used strawberry jam when I’ve been in a pinch & was missing the Apricot jam & that worked just as well)

Directions:

Mixing Ingredients for Apricot Pork Chops

Mix together the dry onion soup mix with the apricot jam and the Russian Salad dressing.

Place pork chops (or chicken) at the bottom of the slow cooker.

Adding sauce mix to Apricot Pork Chops

Add the dry onion soup mix, apricot jam & salad dressing on top of the pork chops.

Stir it all together.

Cook on low 6-8 hours or on high for 4-6 hrs. The time will vary depending on your slow cooker.

Stir several times during the day if you can.

Apricot Russian Porkchops - a quick & easy 4 ingredient recipe

Serve over rice or quinoa

These are the instructions to make it as a slow cooker meal, but you can just as easily make this in the oven as Baked Apricot Pork Chops or Chicken or cook it on the skillet to be done quickly.
