Rocky Road Clusters

Today we’re featuring a yummy holiday recipe from reader Rachel – Rocky Road Clusters! This would be a great recipe to make for gifts for the neighbors or to bring to a holiday gathering.

Ingredients:

  • 1 package Semi-Sweet Chocolate Chips
  • 1 package of Butterscotch chips
  • 1 cup peanut butter
  • 1 cup peanuts
  • 1 package of mini marshmallows

Directions:

  1.  Put 1 package of the semi sweet chocolate chips & butterscotch chips in a microwave safe bowl
  2. Microwave chips for 2 minutes on medium heat (I use power level 5)
  3. Chips will not look melted (see picture), but give them a stir.
  4. You may need more time – 2 minutes was not long enough for me, so I did 30 more seconds on medium heat. {You do not want to overcook the chips or they will taste burnt.}
  5. Add 1 cup of peanut butter {I use Adams brand, I prefer the no stir, but I only had regular today}
  6. Mix well then add the package of marshmallows {you could probably add a few more or less, depending on how thick you want the clusters}
  7. Drop heaping spoonfuls into paper cups {I had these pretty black and white paper cups left over from a cupcake project I did earlier this year}
  8. Refrigerate til set. This takes very little time, maybe 10-20 mins.
These are super fast and easy! I made these 30 minutes before I had to be somewhere and they were all ready to go.
Note: You could also make this as a mini – batch:  1 cup of semi-sweet chocolate chips & 1 cup of butterscotch chips, 1 tbsp of peanut butter (no peanuts) & 2 cups of mini marshmallows. Thanks for the clarification, Rachel!

  1. I just want to clarify that on this recipe to make the full batch you use these ingredients:

    For the mini batch of peanut free clusters I used 1 cup each of the chips, 1 tblsp of peanut butter and 2 cups of marshmallows.
