Kiwi Berry Yogurt Parfait

We’ve been sharing some yummy breakfast ideas the past two months as we know that many of us lead such busy lives that we can often forget about getting a good breakfast. But I have realized how important it is to start my day off with a breakfast that is both healthy and nutritious, but also filling, so that I am not tempted to snack on & off during the day.

One of my favorite breakfasts when I am out & about early for a meeting is to pick up a yogurt & granola parfait at a coffee shop, but I have not been the best about making these at home, so I decided to come up with some better options to save money and eat more healthy when I’m at home.  I typically am so busy rushing around getting my girls breakfast, making lunches & making sure they’re not forgetting their homework that I run out of time to eat myself, so I need quick options like these yogurt parfaits.

Kiwi Berry Yogurt Parfait with Kashi Oats

We have really been into kiwi fruit lately and I love kiwi with strawberries (inspired by my favorite Snapple drink – Kiwi Strawberry). So I decided to mix those two fruits together along with a few other ingredients to create a yummy yogurt parfait! You can even make ahead these parfaits to make it even faster with your busy mornings.

I love getting that extra nutritious boost from eating Kashi cereals, too. I bought the Kashi Go Lean Crisp with Toasted Berry Crumble & it has 9 grams of protein, 8 grams of fiber and 16 grams of whole grains in every 3/4 cup serving. Plus all Kashi cereal is non-GMO project verified, so you don’t have to be worried about what’s inside the food you’re eating or serving your kids. When you combine that with greek yogurt & your favorite fruit, that makes for a very healthy, quick breakfast on the go!

Kiwi Berry Yogurt Parfait Ingredients

Ingredients:

1 cup granola / oats (I used Kashi Go Lean Crisp Toasted Berry Crumble)

1 cup yogurt (I used vanilla greek yogurt)

1/4 cup blueberries

2-3 kiwi cut up

3-4 strawberries cut up

Chocolate chips, optional (I used just a handful of semi-sweet just to add a little hint of chocolate flavor)

*These are all measurements according to taste and what you prefer. You may want more greek yogurt or more/less fruit depending on what you like.

Directions:

Layer the ingredients one at a time for 2-3 layers (if you’ll be saving this for a day or two in the fridge it’s best to layer as it will keep it fresher) .

If you’ll be eating right away, you can either layer the ingredients or mix it all together, whatever you like best to taste all the flavors.

Ingredients

Scale

23 kiwi cut up

34 strawberries cut up

Chocolate chips, optional


Instructions
