Chicken Parmesan Sandwich Recipe – Really Simple & So Tasty!

Chicken Parmesan is one of my husbands favorite meals, so we started making this simple Chicken Parmesan Sandwich recipe for an easier differ version or for lunch too. I generally make the whole dish from scratch and cook it slow in the oven, so its not a meal I just throw together generally.  The breading of the chicken and cooking a sauce are the two most time consuming parts of the homemade recipe, so we came up with a quick and easy version using pre-breaded chicken strips or patties for those nights when you want to comforting taste of Chicken Parmesan but without all the work. Serving it as a sandwich if a fun way to change it up too, and it is a very satisfying meal for cold evenings.

You can use already breaded Chicken Patties or chicken strips, to make this recipe really simple. I thought they would be perfect for a quick and easy version of Chicken Parmesan Sandwiches. We have teens over at our house often, and I wanted a quick and easy meal I could put together for them too, so just another reason to modify one of our favorite traditional recipes into this Chicken Parmesan Sandwiches recipe.

They are a big hit in my house. Not only did the teens like them, but I loved them as well, and I don’t often eat freezer type foods. It was an easy win with my husband for sure. I used patties that are real chicken, and not pre-cooked, so they were juicy and flavorful, and did not have that typical freezer taste that I am not often a fan of. You can also make your chicken parm from scratch, or use any version of breaded chicken in the freezer that you like. If you want to skip the meat use eggplant instead.

It took about 5 minutes to prep this meal, 25 minutes to cook, and another 5 minutes to plate. Since most of that time was spent letting it cook (and only really required about 10 minutes of prep work), it also makes a great weeknight meal for busy families.

If you would prefer to not turn it into a sandwich it is a really easy “shortcut” recipe for Chicken Parmesan too, but my favorite way to eat it was as a sandwich!

Ingredients Needed for these Chicken Parmesan Sandwiches:

  • Breaded Chicken Patties or Chicken Strips
  • Your favorite marinara sauce (I used a 3 Cheese Sauce)
  • Mozzarella Cheese (This is where I splurge, and buy the Fresh Mozzarella Cheese in liquid. You could use any Mozzarella you want though).
  • Parmesan Cheese
  • Cole Slaw
  • Brioche Buns (or your favorite sandwich rolls)

To Make the Chicken Parmesan Sandwiches:

1) Lay out the Chicken Patties or chicken strips in a baking dish (use 4 – 6 with this recipe).

2) Top with the jar of Marinara Sauce (you can reserve 1/3 of the jar if you do 4, or use all if you use 6 to 8 patties).

Cook according to the directions on the Chicken box (time changes depending on the number of patties you are cooking.

3) Once the patties are cooked through take out the dish and top with the Mozzarella and Parmesan Cheeses.

4) Place it back in the oven and cook until the cheeses are bubbling (approx. 5 minutes)

5) Toast up your brioche buns. I do this by adding butter, and letting them cook face down in a frying pan until the butter gets golden on the bun (you could also do this under the broiler).

6) Top a toasted brioche bun with a Parmesan Chicken Patty.

Optional – top with coleslaw before putting the bun top on (like shown at top of the page). I like the extra crunch that the slaw adds to the sandwich!

If you want to make a vegetarian version, do an Eggplant Parmesan Sandwich instead. Simply follow this eggplant parmesan recipe here, and add it to your favorite bun.

What to serve with Chicken Parmesan Sandwich?

Since this is a quick and easy recipe, I often just serve it with potato chips or a side salad. You could also do french fries, onion rings, or sweet potato fries. Because it uses chicken parmesan a simple pasta on the side would work perfectly too. This Bacon Asparagus and Parmesan Pasta recipe would be a perfect compliment.
